Black cardamom (Amomum subulatum) is a distinct aromatic spice known for its large, dark brown to black woody pods and a rich, smoky flavor profile—developed through traditional drying over open wood fires. Unlike green cardamom, it carries earthy, pungent notes with subtle camphor and menthol undertones. Native to the Eastern Himalayan regions (India, Nepal, Bhutan) and parts of Southeast Asia, the pods are harvested when fully mature and dried to lock in their robust taste and firm texture. The inner seeds are small, dark, and less fragrant than green cardamom but contribute to the spice’s deep, savory character.  

Black cardamom is a versatile staple in savory culinary traditions across South Asia and beyond. It is a key component in Indian garam masala blends, biryanis, curries, and lentil dishes, where its smoky depth elevates hearty, slow-cooked meals. In Tibetan cuisine, it is added to butter tea for warmth and aroma, while Chinese cooking uses it in braised meats and occasional five-spice blends. Whole pods are typically infused into soups, stews, or rice dishes to impart flavor, then removed before serving to avoid bitterness; ground black cardamom is sometimes used in spice rubs or marinades for meats.
